Hi there - David here - yes Father Blogger I have sinned... it has been three months since my last post.
What has brought you out of your misery to blog again child?
It was... da da daan. Tomoko's Melanzane alla Parmigiana.
At first glance a simple, possibly slightly underwhelming (only on a dinner menu - NEVER if Tomoko is making it) mix of eggplant, cheeses, tomato, egg and herbs - but in the hands of a culinary poet (like my wife) it can transform into something truly surprising and yes, beautiful and extremely tasty.
Tomoko was cooking for three and a half hours to bring this particular masterpiece into life - but here it is - and boy am I glad to be alive!
